Factory  “Matsuzaki Cutlery Co.”

The factory is located in Mimata-cho, Miyazaki Prefecture, Southern Kyushu. In terms of generations, Mr. Hideo Matsuzaki, the current traditional craftsman of Miyazaki Prefecture, is the third generation.

It has a history of about 150 years. It all started in the days of Satsuma when people cut down trees from the Wanizuka mountain range for their livelihood and needed fire. At that time, people used to make tools for daily life and agriculture as a field smith. There were still many blacksmith shops in those days.

Today, with the advance of mechanization, blacksmith shops have almost disappeared in this area. Instead of mass-producing with heavy oil, Matsuzaki Knives manufactures by beating steel by hand, one by one, heated in charcoal, a traditional technique. It is a forging process.

Why do we insist on beating the steel heated in charcoal one by one? The temperature of charcoal is 800℃, which is lower than that of heavy oil. Also, unlike mass-produced products, the temperature of each blade is evenly distributed. By beating the steel heated at a low temperature, the particles in the steel do not decompose but clump together. By doing so, unlike mass-produced knives, the sharpness of the blade does not degrade and the blade does not chip.

Our customers will not feel the stress of not being able to cut or the stress of the sharpness deteriorating quickly, and the food will taste better.
